Introduction
PESHAWARAX Tawa Mutton Kaleji is a traditional Pakistani dish known for its rich flavor and aromatic spices. 'Kaleji' means liver, commonly from lamb, beef, or chicken. This dish is especially popular in Peshawar, where it's cooked on a 'tawa' (griddle) with a blend of spices that create a delicious and fragrant meal. It's often enjoyed on special occasions and gatherings, served with naan or khameeri roti.

Ingredients:
- Oil: as needed
- Liver: 800 grams
- Tomato paste: 3 to 4 tomatoes
- Turmeric powder: 1 tsp
- Coriander seeds: 1 tsp
- Salt: as needed
- Green chilies: 6-7
- Ginger-garlic paste: 2 tbsp
Method:
- Heat oil on the tawa.
- Add chopped ginger-garlic paste and sauté until golden brown.
- Add liver (kaleji) and cook until its water dries and it gives off a fragrant aroma.
- Heat oil on the tawa again, then fry the liver in it.
- Add tomato paste, turmeric powder, coriander seeds, and salt. Fry well until oil separates.
- Add green chilies and fry until they blend well with the liver.
- Serve hot with naan or khameeri roti. A refreshing lime soda pairs perfectly with this dish.
Note:
Remove the thin membrane covering the liver and cut it into small cubes. Before cooking, cover the raw liver in a little salt for 15 minutes, then wash thoroughly to remove blood veins.
