One of the vegetables we have a love-hate relationship with is none other than the Karela or bitter gourd. However, there are several ways to cook this unusual-looking veggie that can be incredibly tasty, especially with our local spices. The Stuffed Karely Recipe by Kitchen with Amna is one of the best examples of how effective cooking can do wonders. This Punjabi-style stuffed karela is one of the simplest and quickest recipes. To make stuffed karely, she used chicken mince, which has its own distinct flavor. After making the gravy, she fills the karely with chicken mince and serves it with naan and chutney.

Ingredients:
- Bitter Gourd (Karela): 1 kg (14 pieces)
- Turmeric Powder: ½ tsp
- Salt: ½ tsp
- Chicken Mince: 500 g
- Onion: 1 (chopped)
- Garlic Paste: 1 tsp
- Ginger Paste: ½ tsp
- Tomato: 1 (chopped)
- Green Coriander: 1 tbsp (chopped)
- Green Chili: 1 (chopped)
- Button Red Chili: 1 tbsp (crushed)
- Cumin Powder: 1 tsp
- Pomegranate Seeds Powder: 1 tsp
- Garam Masala Powder: ½ tsp
- Coriander Seeds: 1 tbsp (crushed)
- Turmeric Powder: ¼ tsp
- Salt: ½ tsp
- Red Chili Powder: 1 tsp
Gravy:
- Onion: 4 (chopped)
- Tomatoes: 6 (chopped)
- Salt: ½ tsp
- Red Chili Powder: 1 ½ tsp
- Turmeric Powder: ¼ tsp
Cooking Method:
- Prepare Bitter Gourd:
- Remove the outer covering of the bitter gourd and pull out the seeds.
- Marinate with salt and turmeric powder, then let it rest for 20 minutes.
- Wash twice with clean water and dry completely.
- Prepare Stuffing:
- In a bowl, mix chicken mince, chopped onion, garlic paste, ginger paste, tomato, green coriander, green chili, button red chili, cumin powder, pomegranate seeds powder, garam masala powder, crushed coriander seeds, turmeric powder, salt, and red chili powder.
- Fill the mixture into the bitter gourds and bind with thread.
- Shallow Fry:
- Heat oil in a pan and shallow fry the stuffed bitter gourds on medium flame for 15 minutes, stirring occasionally.
- Prepare Gravy:
- In a pot, heat oil and add chopped onions, frying until light pink.
- Add chopped tomatoes, salt, red chili powder, turmeric powder, and cook for 10 minutes on medium to low flame with the lid on.
- Remove the lid, stir, and add the fried bitter gourds. Add a little water, cover with the lid, and cook for 10 minutes on low flame.
- Final Touch:
- Stir gently, and your stuffed karela is ready to serve.
