Ingredients:

  • Beef: 3 kg
  • Onion: 2-3 medium size
  • Garlic: 14-15 cloves
  • Ginger: 1-inch piece
  • Cinnamon Stick: 3-4 pieces
  • Star Anise: 2-3
  • Black Pepper: 1 tbsp
  • Desi Ghee: 1 cup
  • Onion: 3-4 medium size (for frying)
  • Ginger Garlic Paste: 3 tbsp
  • Black Cardamom: 2
  • Cinnamon Stick: 3
  • Black Pepper: 1 tbsp
  • Cloves: ½ tsp
  • Yogurt: 1 cup
  • Salt: 1 tbsp
  • Cooked Beef: from the first step
  • Yakhni: 10 cups
  • Water: 4 cups
  • Tamarind Pulp: ½ bowl
  • Fried Onion: for garnish
  • Cumin Seeds: 1 tbsp
  • Green Chili: for garnish
  • Green Cardamom: 5
  • Cloves: 10-15
  • Bay Leaves: 2-3
  • Fennel: 1 tsp

Method:

1. First Step:

  • In a pressure cooker, add beef, garlic cloves, ginger, salt, whole coriander, fennel, black cardamom, green cardamom, bay leaves, cinnamon stick, star anise, black pepper, and water. Cover with lid and cook for 25-30 minutes until beef is tender.
  • Remove beef from the cooker and strain the yakhni (broth) for further use.

2. Second Step:

  • In a pan, heat oil well. Add chopped onion and fry until brown. Remove some brown onion and set aside for garnish.
  • Add ginger garlic paste, green chili, cumin seeds, black cardamom, cinnamon stick, black pepper, cloves, and cook for 2-3 minutes.
  • Add tomato paste and yogurt. Cover and cook for 8-10 minutes on medium flame.
  • Add salt, chili flakes, and coriander powder. Mix well.
  • Add cooked beef and mix well. Then add yakhni and water.
  • Add tamarind pulp and bring to a boil. Add rice, stir gently, and cook until water is absorbed. Cover and steam cook on low flame for 10-15 minutes.
  • Garnish with fried onion, cumin seeds, and green chilies. Serve hot!
