Yakhni Pulao is a beloved traditional dish in Pakistani cuisine, renowned for its rich flavors and aromatic spices. Ingredients:

  • Basmati Rice: 750g (4 cups)
  • Water: As required
  • Chicken: 750g
  • Garlic (Lehsan): 8-10 cloves, sliced
  • Ginger (Adrak): 1-inch piece, sliced
  • Onion (Pyaz): 1 medium
  • Fennel Seeds (Saunf): 1 tbsp
  • Cumin Seeds (Zeera): ½ tbsp
  • Coriander Seeds (Sabut Dhania): 1 tbsp
  • Green Cardamom (Hari Elaichi): 3-4
  • Mace (Javitri): 2 pieces
  • Nutmeg (Jaifil): 1 small piece
  • Cinnamon Sticks (Darchini): 2-3
  • Cloves (Laung): 5-6
  • Black Cardamom (Bari Elaichi): 2
  • Salt (Namak): ½ tbsp or to taste
  • Black Peppercorns (Sabut Kali Mirch): ½ tsp
  • Citric Acid (Tatri): ¼ tsp
  • Water: 1½ liters
  • Cooking Oil: ½ cup
  • Onion (Pyaz): 1 large, sliced
  • Cinnamon Sticks (Darchini): 2
  • Green Cardamom (Hari Elaichi): 2-3
  • Black Cardamom (Bari Elaichi): 1
  • Black Peppercorns (Sabut Kali Mirch): ½ tsp
  • Cumin Seeds (Zeera): ½ tbsp
  • Cloves (Laung): 3-4
  • Ginger Garlic Paste (Adrak Lehsan Paste): 1½ tbsp
  • Yogurt (Dahi): ½ cup, whisked
  • Red Chili Powder (Lal Mirch Powder): 1 tsp or to taste
  • Black Pepper Powder (Kali Mirch Powder): ½ tsp
  • Fresh Coriander (Hara Dhania): 2 tbsp, chopped
  • Green Chilies (Hari Mirch): 2-3
  • Reserved Stock: 6 cups
  • Salt (Namak): ½ tsp or to taste
  • Fried Onion (Pyaz): For garnish

Method:

  • In a bowl, add rice and water, wash thoroughly, and soak for 20 minutes. Strain soaked rice and set aside.
  • In a wok, add chicken, garlic, ginger, onion, fennel seeds, cumin seeds, coriander seeds, green cardamom, mace, nutmeg, cinnamon sticks, cloves, black cardamom, salt, black peppercorns, citric acid, and water. Mix well and bring to a boil. Cover and cook on low flame until chicken is tender (approximately 15-20 minutes).
  • Take out chicken pieces and set aside. Strain chicken stock (yakhni) and reserve for later use.
  • In a pot, add cooking oil and onion, and fry until light golden.
  • Add cinnamon sticks, green cardamom, black cardamom, black peppercorns, cumin seeds, cloves, and mix well.
  • Add ginger garlic paste and mix well.
  • Now add reserved chicken pieces, mix well, and cook for 2-3 minutes.
  • Add yogurt and mix well.
  • Add red chili powder, black pepper powder, fresh coriander, green chilies, mix well, and cook until oil separates (approximately 4-5 minutes).
  • Add reserved stock, salt, mix well, and bring to a boil.
  • Add soaked rice, mix, and cook on medium-high flame until water is reduced (4-5 minutes). Cover and steam cook on low flame for 18-20 minutes.
  • Garnish with fried onion and serve hot!
