Ingredients

  • Basmati Rice: 1 cup

  • Jaggery (Gur): 400 grams

  • Water: 1 cup (for jaggery syrup)

  • Cloves: 3-4

  • Fennel Seeds: 2 tablespoons

  • Ghee (Clarified Butter): 1/4 cup

  • Green Cardamom Pods, Crushed: 4-5

  • Cinnamon Stick: 1

  • Mixed Nuts (Cashews, Almonds, Raisins), Chopped: 1/4 cup

  • Saffron Strands (Optional): A pinch

  • Water: 2 cups (for cooking rice)

  • Salt: A pinch

Method:

  • Prepare the Jaggery Syrup:

    • In a pan, add jaggery and 1 cup of water.

    • Stir continuously until the jaggery melts and forms a syrup-like consistency.

  • Cook the Rice:

    • Rinse the basmati rice under running water until the water runs clear.

    • Soak the rice in water for about 30 minutes, then drain.

    • In a large pot, add the soaked and drained rice along with 2 cups of water.

    • Add a pinch of salt and bring it to a boil.

    • Cook the rice until it is 70-80% cooked (slightly undercooked). Drain the rice and set it aside.

  • Prepare the Spice Mix:

    • In a separate pan, heat ghee over medium heat.

    • Add the crushed cardamom pods, cloves, fennel seeds, and cinnamon stick, and sauté for a minute until fragrant.

    • Add the mixed nuts to the pan and fry them until they turn golden brown. Remove the nuts from the pan and set them aside.

  • Combine Rice with Jaggery Syrup:

    • Add the partially cooked rice to the jaggery syrup and mix gently until the rice is coated evenly with the syrup.

    • Reduce the heat to low, cover the pan with a lid, and let it cook for about 10-15 minutes to allow the rice to absorb the flavors of the jaggery.

  • Add Saffron (Optional):

    • Soak a pinch of saffron strands in 1-2 tablespoons of warm milk and set it aside.

    • After 10-15 minutes, remove the lid from the pan. Drizzle the saffron milk over the rice and gently mix it in.

    • Cover the pan again and let it cook for another 5 minutes.

  • Final Touch:

    • Turn off the heat and let the Gur Rice rest for a few minutes.

    • Fluff it up gently with a fork.

    • Garnish the Gur Rice with the fried nuts that were set aside earlier.

  • Serve:

    • Serve warm and enjoy this delightful traditional dessert.
