Ingredients:
- Pressure Cook the Base:
- In a pressure cooker, add rice, arhar daal, water, turmeric powder, salt, oil, green peas, carrot cubes, and potato cubes.
- Put the lid on the pressure cooker and cook for 3 whistles on medium flame.
- Remove the lid and mix well.
- Prepare the Tempering:
- In a pan, heat 2 tbsp of ghee over medium heat.
- Add cumin seeds, asafoetida, and dried red chillies. Sauté for a few seconds until fragrant.
- Add chopped onion, chopped green beans, and curry leaves. Sauté until the onions turn golden brown.
- Add slit green chillies and parboiled cauliflower florets. Sauté for a couple of minutes.
- Combine and Cook:
- Add the cooked rice and dal mixture to the pan. Mix well to combine.
- Add water as required to achieve your desired consistency.
- Stir in the amchur powder and garam masala. Mix well.
- Cook on low flame for 5-8 minutes, stirring occasionally, until the kichri thickens to a desired consistency.
- Serve:
- Garnish with fresh coriander leaves.
- Serve hot with a side of yogurt or pickle.
