Ingredients

  • Pure Organic Ghee: 2-3 tablespoons (or as required)

  • Gondh (Edible Gum Crystals): ¾ Cup

  • Makhanay (Puffed Lotus Seeds): 3 Cups

  • Kaju (Cashew Nuts): 1 Cup

  • Badam (Almonds): 1 ½ Cups

  • Pista (Pistachios): ¾ Cup

  • Kishmish (Raisins): ½ Cup

  • Char Magaz (Dried Melon Seeds): 1 Cup

  • Sooji (Semolina): ½ kg

  • Khopra (Desiccated Coconut): 1 Cup

  • Elaichi Powder (Cardamom Powder): 1 teaspoon

  • Pisi Huee Cheeni (Powdered Sugar): ½ kg

Method

  1. Frying the Ingredients:

    • In a wok, heat 2-3 tablespoons of pure organic ghee. Add ¾ cup of edible gum crystals and fry until they double in size. Remove and set aside.

    • In the same wok, fry 3 cups of puffed lotus seeds until they turn light golden. Remove and set aside.

    • Fry 1 cup of cashew nuts until golden brown. Remove and set aside.

    • Add 1 ½ cups of almonds to the wok and fry for 12 minutes. Remove and set aside.

    • Fry ¾ cup of pistachios for 12 minutes. Remove and set aside.

  1. Chopping the Fried Nuts:

  • Using a food chopper, coarsely chop the fried nuts, including cashews, almonds, and pistachios. Set aside the chopped nuts.

  1. Preparing the Raisins and Melon Seeds:

  • In the same pot, add a small amount of ghee and fry ½ cup of raisins for 12 minutes. Remove and set aside.

  • Add 1 cup of dried melon seeds to the pot and fry for 12 minutes. Remove and set aside.

  1. Cooking the Semolina:

  • In the pot, add 1 cup of ghee and ½ kg of semolina. Continuously stir and cook the semolina until it becomes fragrant and slightly golden brown.

  • Add 1 cup of desiccated coconut and 1 teaspoon of cardamom powder to the semolina mixture. Continue to mix well until the mixture turns golden brown.

  1. Combining the Ingredients:

  • In a large mixing bowl, combine the semolina mixture with the coarsely ground fried nuts, fried melon seeds, raisins, and ½ kg of powdered sugar. Mix everything thoroughly until well combined.

  1. Storing the Panjiri:

  • Transfer the prepared Panjiri to an airtight jar. It can be stored for up to 2-3 months, making it a perfect snack or dessert that can be enjoyed over time.
