Kabuli Pulao Recipe by Food Fusion | Traditional Afghan Dish

Introduction:

Kabuli Pulao, a quintessential Afghan dish, is a harmonious blend of fragrant Basmati rice, tender mutton, and an array of aromatic spices. Ingredients:

  • Rice: 600 gram

  • Oil: ½ cup

  • Onions (sliced): 1 medium

  • Mutton: 500 gm

  • Garlic Paste: 2 tbsp

  • Water: 4-5 cups

  • Salt: 2 ½ tsp (or to taste)

  • Sugar: 2-3 tbsp

  • Green Cardamom Powder: ½ tsp

  • Whole Spice Powder: ½ tsp

  • Onion (for frying)

  • Carrots (julienned): 1 cup

  • Sugar: 2 tsp

  • Black Raisins: ¼ cup

Method:

  • Prepare the Mutton and Stock:

    • In a pot, heat ½ cup oil and fry sliced onions until light brown.

    • Add mutton and sauté for a few minutes.

    • Add garlic paste and fry until the meat changes color.

    • Pour in water and add salt. Cook until the water is reduced to half and the meat is tender.

    • Separate the meat from the stock and set aside.

    • Continue to cook the stock until reduced to 1½ cups, strain, and set aside.

  • Caramelize Sugar and Prepare Stock Mix:

    • In a separate fry pan, caramelize 2-3 tbsp sugar on low flame.

    • Add the mutton stock to the caramelized sugar and mix well.

    • Add whole spice powder and green cardamom powder, mix well, and set aside.

  • Fry the Mutton:

    • In a wok, heat 3 tbsp oil and fry the onion until light brown.

    • Add boiled mutton meat and fry for 3-4 minutes, then set aside.

  • Prepare Carrot and Raisin Mixture:

    • In a separate fry pan, heat 2 tsp oil and add julienned carrots.

    • Add 2 tsp sugar and sauté until the sugar melts.

    • Add black raisins, mix, and set aside.

  • Preparation of Kabuli Pulao:

    • In a large pot, layer the parboiled rice.

    • Drizzle the mutton stock mixture over the rice.

    • Sprinkle green cardamom powder and whole spice powder.

    • Layer the fried mutton on top.

    • Finish with the carrot and raisin mixture on top.

    • Cover the pot with a thick cloth and a lid.

    • Simmer on low flame for 10-15 minutes.

  • Serve:

    • Garnish with the carrot and raisin mixture and blanched almonds before serving.
