Ingredients:
- Oil: 3 packets (approx. 1.5 cups)
- Onion: 2 medium, thinly sliced
- Mutton: 1 kg, cut into chunks
- Salt: To taste
- Sugar: 2 tablespoons
- Cumin: 1 teaspoon
- Carrot: 2 large, thinly sliced
- Basmati Rice: 4 cups, soaked for 30 minutes and drained
- Water: As needed
Method:
- Prepare the Meat:
- In a skillet, heat the oil over medium heat.
- Add the sliced onions and fry until golden brown.
- Add the mutton chunks and sauté until browned on all sides.
- Add salt to taste and mix well.
- Pour enough water to cover the meat, mix well, cover with a lid, and cook for 30 minutes or until the meat is tender.
- Prepare the Rice:
- Once the meat is cooked, remove it from the broth (yakhni) and set aside.
- In the same skillet with the yakhni, add the soaked and drained rice.
- Add sugar and cumin, mixing well.
- Cook on medium heat until the water is almost absorbed and the rice is partially cooked.
- Final Cooking:
- Reduce the heat to low, cover the skillet with a tight-fitting lid, and cook the rice on low heat for 20-30 minutes until fully cooked and fluffy.
- Meanwhile, in a separate pan, caramelize the carrot slices in a little oil until they are tender and slightly golden.
- Assembly:
- Once the rice is cooked, gently mix in the caramelized carrots and cooked mutton.
- Let the pulao sit covered on low heat for another 5-10 minutes to allow the flavors to meld together.
- Serve:
