Ingredients:
- Mutton: 500 grams
- Brain (maghaz): 2
- Kidneys (gurdey): 4
- Garlic: for boiling water
- Ginger-garlic paste: 1 tsp
- Onion: 1, chopped
- Tomatoes: 2, sliced
- Salt: to taste
- Red chili paste: 1 Tbsp
- Green chilies: to taste, chopped
- Yogurt: 2 Tbsp
- Ghee: ½ cup
- Black pepper powder: 1 tsp
- Butter (makhan): 2 Tbsp
Method:
- Boil the mutton, brain, and kidneys in garlic water until tender. Once cooked, chop them finely.
- In a pan, add the kidneys and cook them in the garlic water.
- Add the chopped mutton and cook in the garlic water.
- Add the ginger-garlic paste, chopped onion, and tomato slices. Cook on low flame with the lid on for 10 minutes.
- Add salt and red chili paste, sautéing well.
- Add chopped green chilies and mix well.
- Add the brain (maghaz) and garlic water, sautéing until the water dries up.
- Add yogurt and ghee, mixing well and sautéing thoroughly.
- Finally, add butter (makhan) and cook on low flame for 10 minutes until well-fried.
- Serve hot with naan or roti.
