Ingredients:

  • Mutton: 500 grams
  • Brain (maghaz): 2
  • Kidneys (gurdey): 4
  • Garlic: for boiling water
  • Ginger-garlic paste: 1 tsp
  • Onion: 1, chopped
  • Tomatoes: 2, sliced
  • Salt: to taste
  • Red chili paste: 1 Tbsp
  • Green chilies: to taste, chopped
  • Yogurt: 2 Tbsp
  • Ghee: ½ cup
  • Black pepper powder: 1 tsp
  • Butter (makhan): 2 Tbsp

Method:

  • Boil the mutton, brain, and kidneys in garlic water until tender. Once cooked, chop them finely.
  • In a pan, add the kidneys and cook them in the garlic water.
  • Add the chopped mutton and cook in the garlic water.
  • Add the ginger-garlic paste, chopped onion, and tomato slices. Cook on low flame with the lid on for 10 minutes.
  • Add salt and red chili paste, sautéing well.
  • Add chopped green chilies and mix well.
  • Add the brain (maghaz) and garlic water, sautéing until the water dries up.
  • Add yogurt and ghee, mixing well and sautéing thoroughly.
  • Finally, add butter (makhan) and cook on low flame for 10 minutes until well-fried.
  • Serve hot with naan or roti.
