    1. Cook the Trotters:

  • In a pressure cooker, add 2 finely chopped onions, 2 chopped tomatoes, 1 ½ tablespoons of ginger-garlic paste, 2 large cardamoms, 1 small piece of cinnamon, 1-2 chopped green chillies, 1 tablespoon of salt, 1 teaspoon of red chilli powder, ½ teaspoon of turmeric powder, and 2 ½ glasses of water. Mix well.
  • Close the lid of the pressure cooker and cook for 5 minutes. If using a regular saucepan, cook on low to medium heat for 1.5 hours. If the trotters are not fully tender, cook them for a bit longer.

    2. Separate the Soup:

  • Once cooked, separate the soup from the trotters. Place the trotters in a pan and cook them for 5 minutes on medium heat. Add ½ cup of cooking oil and fry the trotters for 15 minutes, ensuring they are evenly browned.

    3. Combine with Soup:

  • After frying, add the reserved soup back into the pan with the trotters. Pour in ½ glass of water and cook for an additional 15 minutes, allowing the flavors to meld together.

    4. Final Seasoning:

  • To finish, sprinkle ½ teaspoon each of garam masala powder, black pepper powder, and cumin powder into the pan. Mix well to evenly distribute the spices.

    5. Garnish and Serve:
