- Goat's Trotters (Feet): 4 pieces
- Finely Chopped Onion: 2 medium-sized
- Ginger Garlic Paste: 2 tablespoons
- Red Chili Powder: 1 teaspoon
- Coriander Powder: 2 tablespoons
- Turmeric Powder: ½ teaspoon
- Yogurt: 5 grams
- Garam Masala Powder: ½ teaspoon
- Salt: 1 teaspoon (or to taste)
- Ghee (Clarified Butter): 100 grams
- Black Peppercorns: 10
- Large Cardamom: 2
- Green Cardamom: 3
- Cumin Seeds: ½ teaspoon
- Cinnamon Sticks: 2 pieces
- Green Chilies: 1-2 (chopped)
- Garlic Cloves: 1-2
- Finely Chopped Ginger: 1-inch piece
Method
1. Clean the Goat's Trotters:
- Start by cleaning the goat's trotters (feet) thoroughly. Mix them with 1 teaspoon of salt and 2 teaspoons of flour, rubbing well to remove any hair. Leave for 5 minutes, then rinse thoroughly with water.
2. Prepare the Stock:
- In a pressure cooker, add the cleaned trotters, ½ teaspoon of turmeric powder, 1 teaspoon of salt, 1-2 chopped garlic cloves, 1 inch of chopped ginger, 2 finely chopped onions, and 2 chopped green chilies.
- Pour in 2-3 glasses of water, mix well, and cook under pressure for 15 minutes. After cooking, release the pressure and set aside the boiled onion and green chilies.
3. Prepare the Curry Base:
- In a separate saucepan, heat 100 grams of ghee over medium heat. Add the whole spices: 2 cinnamon sticks, 2 large cardamom pods, 3 green cardamom pods, ½ teaspoon cumin seeds, 10 black peppercorns, and 1-2 cloves. Stir fry for about 1 minute until fragrant.
4. Fry the Aromatics:
- Add 2 tablespoons of ginger garlic paste to the pan and fry for 5 minutes until golden brown. Reduce the heat and add the ground spices: ½ teaspoon salt, ½ teaspoon turmeric powder, 1 teaspoon red chili powder, 2 tablespoons coriander powder, and ½ teaspoon garam masala powder.
- Mix well, being careful not to burn the spices.
5. Add Yogurt and Cook:
- Slowly incorporate 5 grams of yogurt into the spice mixture, stirring continuously to avoid curdling. Fry the mixture on low heat until the oil starts to separate from the spices.
6. Combine the Ingredients:
- Add the boiled onion and green chilies to the pan, frying on low heat until well incorporated. Then, add the boiled trotters along with the stock from the pressure cooker. Mix everything well and let it simmer.
7. Final Cook:
- Cover and cook the curry on low heat for an additional 20-25 minutes, allowing the flavors to meld together. Adjust the consistency of the curry by adding more or less water according to your preference.
8. Garnish and Serve:
- Garnish the Siri Payee with chopped ginger, fresh coriander, and green chilies. Serve hot with naan, roti, or steamed rice.
