  • Beef Feet (Trotters): 4 pieces
  • Salt: 2 teaspoons (or to taste)
  • Turmeric Powder: 2 teaspoons
  • Cumin Seeds: 1 teaspoon
  • Dried Coriander: 1 tablespoon
  • Large Cardamom: 1-2 pieces
  • Cinnamon Sticks: 4-5 small pieces
  • Nutmeg: A small piece
  • Finely Chopped Onions: 5-6 medium-sized
  • Tomato Paste: ½ kilo
  • Ginger Garlic Paste: 2 tablespoons
  • Whipped Yogurt: ½ cup
  • Aniseed Flower: 1 small piece
  • Cooking Oil: 2 cups

    Method

    1. Boiling the Trotters:

  • Place the beef feet (trotters) in a large saucepan and fill it with water. Turn on the stove and bring the water to a boil.
  • In a cotton cloth, wrap cumin seeds, dried coriander, large cardamom, cinnamon sticks, nutmeg, and aniseed flower. Tie the cloth securely to form a spice bundle.
  • Add the spice bundle to the saucepan along with the turmeric powder. Let the trotters cook on medium heat for 2-3 hours until tender.
  • Once the trotters are boiled, reduce the heat and carefully squeeze out the water from the spice bundle to extract all the flavors.

    2. Preparing the Masala:

  • In a separate saucepan, heat 2 cups of cooking oil over medium heat. Add the finely chopped onions and fry until they turn medium brown.
  • Add the ginger garlic paste to the onions and fry for about 5 minutes, stirring occasionally. If the mixture becomes too dry, add a little hot water to the pan.
  • Add the tomato paste to the pan, along with salt, red pepper, and turmeric powder. Mix well, cover, and cook on medium heat until the spices are fully cooked and the rawness disappears.
  • Turn off the heat and add the whipped yogurt to the masala mixture. Mix thoroughly until well combined. Continue frying the masala until the oil begins to separate from the mixture.

     

    3. Combining the Trotters and Masala:

  • Add the prepared masala to the saucepan containing the boiled trotters. Stir well to ensure the trotters are fully coated with the masala.
  • Cook on low heat for 5 minutes to allow the flavors to meld together.
  • Sprinkle hot spice powder and chopped coriander over the dish, then cook for an additional 5 minutes on low heat.

    4. Serving:

  • Serve the Siri Payee hot with fresh naan or roti. The thick, flavorful broth is perfect for dipping.
