Ingredients:
- Beef (with 20% fat): ½ kg (boneless)
- Garlic cloves: 14-15
- Ginger: 2-inch piece
- Onion: 1 medium, chopped
- Green chilies: 2-3
- Fresh mint: 2 tbsp
- Fresh coriander: 2 tbsp
- Baking soda: ½ tsp
- Garam masala powder: 1 tsp
- Dried coriander (fried and ground): 2 tbsp
- Finely ground red pepper: 2 tbsp
- Fried cumin seeds (ground): 2 tbsp
- Salt: 1 tsp
- Red chili powder: 1 tsp or to taste
- Ghee: 2 tbsp
Method:
- In a large bowl, mix the ground beef with ginger, garlic, onion, green chilies, fresh coriander, mint, baking soda, garam masala powder, coriander powder, ground red chili, cumin powder, and salt. Blend well using a food processor.
- Transfer the mixture to a large bowl, add ghee, and knead for 5-6 minutes. Cover and refrigerate for 2 hours.
- Prepare skewers by either using metal skewers or creating makeshift ones with wooden strands wrapped in aluminum foil.
- Take 55 grams (or a handful) of the beef mixture and shape it around the skewers in a cylindrical form. Remove from the skewer immediately.
- Heat 2 tablespoons of oil in a frying pan. Add the kebabs and fry on medium heat for 6-8 minutes on each side until fully cooked.
- If you wish to store the kebabs, lightly fry them for 2-3 minutes, allow them to cool, and then freeze in a sealed container. Do not freeze uncooked kebabs.
