Ingredients:
- Minced meat: 1 kg
- Kashmiri red chili: 1 tsp
- Roasted cumin powder: 1 tsp
- Red chili powder: 1 tsp
- Garam masala powder: 1 tsp
- Turmeric powder: 2 pinches
- Salt: 1 tsp
- Chat masala: 1 tsp
- Ginger paste: 1 tbsp
- Garlic paste: 2 tbsp
- Onion: 1 medium-sized, grated
- Fresh green chilies: 4-5, finely chopped
- Fresh coriander: 2 handfuls, finely chopped
- Lemon juice: to taste
- Coal: 1 piece for smoke flavor
Method:
- In a large bowl, combine the minced meat with Kashmiri red chili, roasted cumin powder, red chili powder, garam masala powder, turmeric powder, salt, chat masala, ginger paste, garlic paste, grated onion, and finely chopped green chilies.
- Mix in the fresh coriander and lemon juice thoroughly. If the mixture is too wet, add ground roasted chickpeas to absorb excess moisture.
- Press the meat mixture into a steel utensil. Burn the coal and place it on top of the mixture, adding a small amount of butter to the coal. Cover with a lid for 5 minutes to infuse the smoky flavor.
- Shape the mixture into meatballs. Lightly spray a skewer with water and mold the meatballs lengthwise onto the skewer. Then remove the meat from the skewer, maintaining the cylindrical shape.
- Heat 2 tablespoons of oil in a frying pan. Fry the kebabs on low heat for 10-12 minutes, turning them to ensure they cook evenly on all sides.
- Once done, remove the kebabs onto a plate, sprinkle a little salt on top, and serve with chopped onions and green chutney.
