Detailed Recipe

Ingredients:

  • Ground beef or ground mutton with fat: 1 kg
  • Onions: 3 medium-sized, finely chopped
  • Green chilies: 5, finely chopped
  • Green coriander: A handful, finely chopped
  • Tomatoes: 2 medium-sized, finely chopped
  • Ginger-garlic paste: 2 tablespoons
  • Carom seeds: 1 teaspoon
  • Dry coriander: 2 ½ tablespoons
  • Cumin: 1 tablespoon
  • Pomegranate seed powder: 1 ½ tablespoons
  • Chopped red pepper: 2 teaspoons
  • Cumin powder: 1 teaspoon
  • Garam masala: 1 teaspoon
  • Black pepper powder: ½ teaspoon
  • Salt: To taste
  • Eggs: 1-2
  • Flour: 2 ½ tablespoons

Method:

  • Finely chop the onions and squeeze out the water by hand to avoid excess moisture in the mixture.
  • In a large bowl, combine the minced meat, finely chopped onion, green chilies, green coriander, tomatoes, and ginger-garlic paste.
  • Grind cumin, dried coriander, and carom seeds in a grinder and add them to the meat mixture.
  • Add pomegranate powder, chopped red pepper, cumin powder, garam masala, black pepper powder, salt, eggs, and flour. Mix everything thoroughly.
  • Cover the mixture and let it rest for 2 hours to allow the flavors to meld.
  • Wet your hands with water to shape the kebabs. For larger kebabs, press the mixture into a flat round shape on a plate.
  • If you prefer using fat for frying, render the fat in a frying pan over low heat until the fat turns brown and releases oil. Use this oil to fry the kebabs.
  • Gently place the kebabs into the hot oil and fry over medium heat until they are browned and cooked through.
  • Serve the Chapli Kebabs hot with chutney or raita.
