Ingredients:

  • Water: ½ cup
  • Turmeric Powder: ½ teaspoon
  • Salt: ½ tablespoon
  • Cumin: ½ tablespoon
  • Ginger Garlic Paste: 2 tablespoons
  • Onions: 2 medium-sized, finely chopped
  • Chicken: 800 grams
  • Corn Oil: ½ cup
  • Green Cardamom: 2-3
  • Large Cardamom: 2
  • Ground Black Pepper: ½ teaspoon
  • Cloves: 5-6
  • Cinnamon Pieces: 2-3
  • Bay Leaves: 2
  • Coriander Powder: 1½ tablespoons
  • Red Chili Powder: 2 teaspoons
  • Garam Masala Powder: ½ tablespoon
  • Pepper Powder: 1 teaspoon
  • Tomatoes: 2 medium-sized, chopped
  • Yogurt: ½ cup
  • Green Coriander: ½ cup, chopped
  • Mint Leaves: ½ cup, chopped
  • Green Chilies: 3-4, chopped
  • Dried Plums: 8-9
  • Fried Onion: 1 tablespoon
  • Basmati Rice: 800 grams
  • Biryani Spice Mix: 1 tablespoon
  • Lemons: 2, chopped
  • Kewra Water: 2 tablespoons
  • Yellow Food Coloring: ½ teaspoon or as required

Method:

  • Prepare the Chicken:
    • In a frying pan, combine water, turmeric powder, cumin, salt, and ginger garlic paste. Mix well and add the chopped onions. Stir to combine.
    • Add the chicken pieces, mix well, cover, and cook on low heat for 5-6 minutes.
    • Remove the lid and cook on high heat for 2-3 minutes. Turn off the heat and set aside.
  • Cook the Spices:
    • Heat corn oil in a large saucepan. Add green cardamom, large cardamom, ground black pepper, cloves, cinnamon pieces, bay leaves, coriander powder, red chili powder, garam masala powder, and black pepper powder. Cook for 2 minutes until aromatic.
    • Add the chopped tomatoes and whipped yogurt, mixing well.
    • Add the cooked chicken to the saucepan, stir well, and cook for 5-6 minutes. Add chopped green coriander, mint leaves, and green chilies. Cook on high heat until the oil starts to separate. Add dried plums.
  • Layer the Biryani:
    • Remove half of the prepared chicken mixture and set it aside. In a large saucepan, spread some fried onions over the remaining chicken. Add half of the partially boiled rice, spreading it evenly.
    • Layer the fried onions, biryani spices, and lemon slices over the rice, followed by the remaining chicken mixture. Add the rest of the boiled rice on top.
    • Mix the yellow food coloring with kewra water and drizzle it over the rice. Sprinkle fried onions on top.
  • Final Cooking:
    • Cover the pot and cook on low heat ("dum") for 10-12 minutes to allow the flavors to meld together.
  • Serve:
    • Fluff the rice gently with a fork. Serve hot with raita or a side salad.
