  • Cumin Seeds: 1/2 teaspoon
  • Kewra Water: 1 teaspoon (for aroma)

Method

Prepare the Chicken:

  • In a large saucepan, add the chicken pieces.
  • Add coriander powder, red chili powder, turmeric powder, ginger paste, garlic paste, salt, and unwhipped yogurt to the chicken.
  • Mix well to ensure the chicken is fully coated with the spices and yogurt.

Cooking the Chicken:

  • Cover the saucepan and cook the chicken over medium heat for 15 minutes, allowing the chicken to absorb the flavors of the spices.

    Prepare the Garam Masala:

  • In a dry pan, lightly toast the large cardamom seeds, nutmeg, mace, cinnamon stick, green cardamoms, cloves, black peppercorns, and cumin seeds for 2-3 minutes to release their aromas.
  • Grind the toasted spices into a coarse powder.

Combine and Cook:

  • Add the finely mashed fried onions and the freshly ground garam masala to the chicken.
  • Stir well, cover the saucepan again, and cook on low heat for an additional 10 minutes to allow the flavors to meld together.

Finish with Kewra Water:

  • Finally, add 1 teaspoon of kewra water to the chicken curry for a fragrant finish.
