    Method

    1. Preparing the Lentils and Grains:

  • In a large skillet, pour 6 liters of water and bring it to a boil.
  • Add all the lentils, barley, wheat, and basmati rice to the boiling water.
  • Mix in the red chilli powder, salt, coriander powder, turmeric powder, cumin powder, garlic paste, and ginger paste.
  • Reduce the flame to low and cook the mixture for approximately 2 hours until the lentils and grains are fully cooked and soft.

    2. Preparing the Mutton:

  • In a separate pan, heat ½ cup of oil over medium flame.
  • Add the bay leaves, black pepper, and cinnamon sticks, and sauté for 1-2 minutes until fragrant.
  • Add the fried onions and mutton to the pan and sauté until the mutton turns brown.
  • Mix in the garlic paste, ginger paste, turmeric powder, red chilli powder, coriander powder, salt, and garam masala.
  • Continue to roast the mutton until the spices are well incorporated and the mutton is fragrant.
  • Add the yogurt to the pan and cook until the yogurt water evaporates and the mutton is well-coated with the spice mixture.
  • Pour 2 liters of water into the pan, cover, and cook the mutton on low flame for 1 hour until tender.

    3. Combining and Finishing:

  • Once the mutton is fully cooked, mash it thoroughly using a hand masher or fork.
  • Add the mashed mutton to the cooked lentils and grains, and mix well.
  • Cook the Daleem on low heat, stirring occasionally, until the mixture achieves a creamy, paste-like consistency.

    4. Garnishing and Serving:

  • Garnish the Daleem with lemon wedges, green chillies, and a sprinkle of chat masala.
