Ingredients

  • Boneless Chicken: 300 grams
  • Yogurt (Curd): 2 tablespoons
  • Kashmiri Chilli Powder: 1 teaspoon (for color)
  • Red Chilli Powder: 1½ teaspoons
  • Coriander Powder: 1½ teaspoons
  • Cumin Powder: 1½ teaspoons
  • Garam Masala: 1½ teaspoons
  • Pepper Powder: ¼ teaspoon
  • Ginger-Garlic Paste: 2 teaspoons
  • Turmeric Powder: 1 teaspoon
  • Lemon Juice: 1 teaspoon
  • Butter: 1 tablespoon
  • Oil: 2 tablespoons
  • Cumin Seeds: ½ teaspoon
  • Finely Chopped Onion: 2 medium-sized
  • Tomato Paste: From 2 tomatoes
  • Fresh Cream: 4 tablespoons
  • Salt: To taste
  • Kasuri Methi (Dried Fenugreek Leaves): ½ teaspoon

    Method

    1. Marinate the Chicken:

  • In a mixing bowl, add the boneless chicken pieces.
  • Combine yogurt, Kashmiri chili powder, red chili powder, coriander powder, cumin powder, garam masala, pepper powder, ginger-garlic paste, turmeric powder, salt, and lemon juice.
  • Mix the ingredients thoroughly, ensuring each piece of chicken is well coated with the marinade.
  • Cover the bowl and let the chicken marinate for 30 minutes, allowing the flavors to infuse and the meat to tenderize.

    2. Cook the Chicken:

  • Heat a tablespoon of butter in a saucepan over low flame.
  • Add the marinated chicken pieces and cook for about 5 minutes until the chicken is just cooked through.
  • Remove the chicken from the pan and set it aside.

    3. Prepare the Sauce:

  • In another pan, heat 2 tablespoons of oil.
  • Add cumin seeds and let them sizzle for a few seconds.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and sauté for another minute.
  • Stir in the tomato paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.
  • Cook the mixture until the oil begins to separate from the masala, indicating that the spices are well-cooked.

    4. Combine and Finish:

  • Add the cooked chicken pieces back into the pan with the spice mixture.
  • Stir in the fresh cream, and cook the tikka until the sauce thickens and the water evaporates.
  • Add kasuri methi, crushing it between your palms to release its aroma, and mix well.
  • Turn off the heat and let the dish rest for a few minutes to allow the flavors to meld together.

    5. Serve:

  • Garnish with a sprinkle of fresh coriander leaves or a dash of additional cream if desired.
  • Serve hot with naan, roti, or steamed rice.
