Yakhni (Broth):
- Goat Trotters: 2 pcs
- Water: 750 ml
- Ginger Garlic Paste: ½ tbsp
- Ghee: 2 tbsp
Method
- Prepare the Yakhni (Broth):
- In a pot, add 750 ml water, goat trotters, ½ tbsp ginger garlic paste, and 2 tbsp ghee. Bring to a boil and simmer for 1-2 hours to extract the flavors. Strain and set aside the broth.
- Cook the Mutton:
- In a clay pot (Matka), heat 1 cup ghee. Add chopped onions and sauté until golden brown.
- Add ginger garlic paste and sauté until fragrant.
- Add mutton, salt, turmeric powder, red chilli powder, and coriander powder. Mix well.
- Pour 1 glass of water into the pot, cover, and cook on medium flame for 1 hour.
- Roast the Mutton:
- After 1 hour, increase the flame to high and roast the mutton for 3-5 minutes to enhance the flavor.
- Combine with Yakhni:
- Add the prepared yakhni (broth) to the mutton. Mix well and cook on low flame for another hour.
- Prepare Almond Paste:
- In a blender, add wheat flour, almonds, and ½ cup water. Blend to make a smooth paste.

- Add the almond paste to the mutton mixture, stir well, and cook for another 5 minutes until well combined and thickened.
