Ingredients

  • Oil: 1 cup
  • Salt: 1 teaspoon
  • Chicken: 1 kg (cut into small pieces)
  • Tomatoes: 500 grams
  • Ginger and Garlic Paste: 2 tablespoons
  • Cumin Powder: 1 tablespoon
  • Dry Coriander Powder: 1 tablespoon
  • Black Pepper: 1 teaspoon
  • Garam Masala: ½ teaspoon
  • Red Chilli Powder: ½ teaspoon
  • Green Chilies: 7 (whole)

    Method

    1. Heat the Oil:

  • In a large skillet, add 1 cup of oil and heat it on medium flame.

    2. Roast the Chicken:

  • Add 1 kg of chicken pieces to the skillet and sprinkle with 1 teaspoon of salt.
  • Roast the chicken on high flame for 4-5 minutes until it starts to turn golden.

    3. Prepare the Tomatoes:

  • Cut 500 grams of tomatoes into halves and add them to the skillet.
  • Lower the heat and cook for about 7 minutes until the tomatoes soften. Once soft, peel off the tomato skins.

    4. Saute the Aromatics:

  • Add 2 tablespoons of chopped ginger and garlic to the skillet. Saute well until fragrant and the mixture starts to caramelize.

    5. Add the Spices:

  • Sprinkle in 1 tablespoon of cumin powder, 1 tablespoon of dry coriander powder, and mix well.
  • Next, add 1 teaspoon of black pepper, ½ teaspoon of garam masala, ½ teaspoon of red chilli powder, and 7 whole green chilies.
  • Mix everything on high flame to blend the flavors and cook until the chicken is well-coated with the spices.

    6. Finish and Serve:

  • Once the chicken is fully cooked and the spices are well-blended, turn off the flame.
  • Serve hot with naan or chapati and your favorite chutney.
