Detailed Recipe

Ingredients:

  • Beef: 700 grams
  • Fat: 50-100 grams
  • Onions: 2 medium-sized
  • Dried pippul: 1
  • Kabab chini (Tailed Pepper): 1-2
  • Cinnamon: Small piece
  • Cumin: 1 tablespoon
  • Carom seeds: 2 pinches
  • Thick red chilies: 5-6
  • Dried coriander, coarsely ground: 2 tablespoons
  • Pepper: ½ tablespoon
  • Large cardamom: 2
  • Flour: 2 tablespoons (fried for 3 minutes beforehand)
  • Garlic: Crushed 8-7 pieces
  • Green chilies: 4-5 finely chopped
  • Turmeric: ¼ teaspoon
  • Salt: ¼ teaspoon

Method:

  • Dry the meat with a cloth and cut it into small pieces for easy mincing.
  • Chop the onions, then wrap them in a muslin cloth or press hard to remove excess water.
  • Fry the spices (pippul, kabab chini, cinnamon, cumin, carom seeds, red chili, dried coriander powder, black pepper, and cardamom) for 3 minutes and grind them coarsely in a grinder.
  • Fry the flour for 3 minutes as well.
  • Finely grind the meat and fat in a chopper or pass through a hand machine 3 times.
  • In a bowl, mix the minced meat with onions, garlic paste, finely chopped green chilies, turmeric, chopped red chilies, salt, ground spice mix, and flour. Mix well and refrigerate for an hour.
  • Form a barbecue stick or skewer by tying 5-6 wooden sticks together.
  • Apply the minced meat (qeema) on the skewers in a cylindrical shape. Dissolve yellow food coloring in a cup, dip your hand in it, and lightly touch the kebabs to color them.
  • Heat ghee in a frying pan and fry the kebabs on low heat, or cook them over coals for an authentic flavor.
